Preheat oven to 375 °F, roast seasoned potatoes for 20 minutes until browned. Grate carrots, slice radishes, cucumber, tomato and onion; toss with spring greens, set aside.
Pour liquid from Chick'n pouch into a small bowl. Add oil, vinegar and whisk to incorporate all flavours. Pour vinaigrette over salad. Divide mixed greens and potatoes on two plates and drizzle with vinaigrette. Slice Chick'n Breast in half, place on top of potatoes and drizzle remainder of sauce over. Make it pretty with chopped chives.
